Miso Soup

Miso soup is a stable of Japanese cuisine. It is a simple, clear soup and it is very healthy! This recipe calls for scallions at the end but the scallions can easily be left out.


Ingredients:

Dashi Stock Ingredients

  • 1 -2 tsp of sesame oil
  • 1/2 medium chopped onion
  • 1 diced celery stalk
  • 1 diced carrot
  • 1 minced garlic clove
  • 4 cups of water
  • 1.2 cup of dried shitake mushrooms
  • 2 tbsp of crumbled wakame
  • 1 piece of kombu
  • 1 tsp of minced ginger
  • a pinch of crushed red pepper

Saute the onion, celery, carrot and garlic in a pan with sesame oil. Saute until the onion is translucent. Next, add the rest of the ingredients and bring everything to a boil. Simmer for 15 more minutes. The dashi stock is complete. Now it is time to make the rest of the miso soup to add to the stock.

Sesame Asparagus

Sesame Asparagus makes for a great and healthy side dish to either a lunch or a dinner meal. It is also very easy to make! I just love the warm taste of toasted sesame seeds.

Serves: 4
Cooking time:
20 minutes
Ingredients:

  • 1 pound of asparagus cut into 1 ½ inch pieces
  • 1 minced garlic clove
  • 2 tablespoons of butter
  • ½ cup of chicken broth
  • 1 tablespoon of toasted sesame seeds

Cook the sesame seeds in a pan until they are golden brown. Next, heat some butter in a pan then add the asparagus and garlic. Saute the asparagus and garlic in the buttered pan for about 2 minutes. Then stir in the broth and bring everything to a boil. Once everything starts boiling, reduce the heat and cover the pan. Let it simmer for about 5 minutes or until the asparagus is crisp...

What is your favorite Teriyaki Chicken recipe? This is one that I’ve found and used quite a bit over the years. It is easy to make and taste good. Let’s make some Teriyaki Chicken!

Ingredients:

  • 4 boneless, skinless chicken thighs
  • 4tbsp teriyaki sauce
  • dried fine egg noodles
  • groundnut oil
  • root ginger, grated
  • 1 garlic clove, crushed
  • a handful of stir-fry vegetables
  • 2tbsp soy sauce
  • 2tsp sesame oil
  • sesame seeds

Marinate the chicken in the teriyaki sauce for 10 minutes. While the chicken is marinating, cook the noodles then drain and rinse them in cold water. Skewer the chicken and coat them with leftover teriyaki sauce. Put the chicken under a hot grill and turn them over often for about 10 minutes...
