Miso Soup

Miso soup is a stable of Japanese cuisine. It is a simple, clear soup and it is very healthy! This recipe calls for scallions at the end but the scallions can easily be left out.


Ingredients:

Dashi Stock Ingredients

  • 1 -2 tsp of sesame oil
  • 1/2 medium chopped onion
  • 1 diced celery stalk
  • 1 diced carrot
  • 1 minced garlic clove
  • 4 cups of water
  • 1.2 cup of dried shitake mushrooms
  • 2 tbsp of crumbled wakame
  • 1 piece of kombu
  • 1 tsp of minced ginger
  • a pinch of crushed red pepper

Saute the onion, celery, carrot and garlic in a pan with sesame oil. Saute until the onion is translucent. Next, add the rest of the ingredients and bring everything to a boil. Simmer for 15 more minutes. The dashi stock is complete. Now it is time to make the rest of the miso soup to add to the stock.

Miso Soup Ingredients

  • 1 tbsp of sweet white miso
  • 1/4 – 1/2 cup of cubed tofu
  • 1 – 2 chopped scallions

Add the sweet white miso to the dashi stock ans heat until the miso is dissolved. Then add the cubed tofu and heat until the tofu is warm. Pour the now complete miso soup in the dashi stock into a bowl and serve with the chopped scallions.
