Fried Coconut Shrimp

This tasty Fried Coconut Shrimp recipe is delicious. I love shrimp but it is so flavorless on its own. There is nothing like a little coconut to give it some flavor. The coconut shrimp is both delicious and refreshing. I feel like I’m on a tropical island on the beach by the ocean when I take a bite of one of these shrimps. Add a slice of lemon on the side and sprinkle the lemon  juices on the shrimp for a little extra zest. And don’t forget to include a nice cool dipping sauce like a nice Remoulade Sauce! That type of dipping sauce is one of my favorites to use with shrimp.

Ingredients:

  • 1 ¼ cups of all purpose flour
  • 1 ¼ cups of cornstarch
  • 6 ½ teaspoons of baking powder
  • ½ teaspoons of salt
  • ¼ teaspoons of Cajun seasoning
  • 1 ½ cups of cold water
  • ½ teaspoons of vegetable oil
  • 1 ½ cups of flaked coconut
  • 1 pound of uncooked large shrimp

Combine the flour, cornstarch, baking powder, salt and Cajun seasoning in a large bowl. Then stir in the water and oil. Put the coconut flakes in another bowl. Then take the uncooked shrimp, dip it in the batter you made in the first bowl until all of the shrimp is coated. Then place it in the coconut flakes bowl and evenly coat the entire shrimp with coconut. Heat the oil in a skillet. Once the oil is hot enough, place the shrimp in the skillet and cook until golden brown. Place the shrimp on a plate with extra sauce or garnishes and serve.
