Chai Rice Pudding

Chai Rice Pudding is a popular dish throughout Asia and especially in India and Sri Lanka. This is exactly a tropical island dish, although it is enjoyed on some islands due to Indian and Chinese influences. One thing’s for sure – this rice pudding is delicious! It is easy to make too. Don’t worry about that cooking time because it is so easy. You can eat this dish both hot or cold. I like it hot during the winter and cold during the summer. Rice pudding can be pretty versatile in that way.

  • 8 cups of milk
  • 1 cup of uncooked basmati rice
  • ½ cup of sugar
  • ¼ teaspoon og ground cinnamon
  • ¼ teaspoon of ground cardamon
  • ¼ teaspoon of ground ginger
  • ⅛ teaspoon of ground allspice

Combine the milk, rice, sugar and salt in a saucepan and bring to a boil. Then reduce the heat and let everything simmer for about 35 to 40 minutes or until slightly thickened. Make sure to stir everything often. Once you have a pudding like thickness, remove from the heat and stir in the spices. The pudding can either be placed in the refrigerator to cool down or served right away as warm pudding.
