Here’s a nice and easy avocado soup dish that is perfect if you are planing a multi-course meal. if you be a great started for an Island or Caribbean themed dinner party!

  • 1 tablespoon of flour
  • 1/2 of a large avocado
  • 1 tablespoon of butter
  • 1 teaspoon of salt
  • 1/2 cup of milk
  • 1/2 of a green pepper
  • 2 cups of white stock or chicken bouillon
  • a dash of worcestershire sauce

Melt the butter in the microwave for about a minute or until the butter completely turns into a liquid. In a large pot combine the butter and flour. Carefully stir the flour into the melted butter. Then add the milk and slowly cook everything until the mixture is a thick, white sauce. After that, stir in the white stock or chicken bouillon. Smash the half of the avocado up and add to the pot of soup during the last minute of cooking. If adding peppers, slice the peppers and add them before adding the avocado. Keep the soup cooking at a hot or warm temperature but be carefully not to let it boil. Season the soup with salt and worcestershire to taste. Serve and enjoy.
