Stamp and Go Jamaica Salt Cod Fritters

This is a simple to make Jamaican salt cod dish. If you ever want to spice up your meal with a little Caribbean flare, this dish is perfect for that. Just make sure to start preparing it the day before you wish to serve it so that the salt cod has time to soak.


  • 8oz Salt cod
  • 1 cup Flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Dried thyme
  • 3/4 cup Cold water
  • 1 egg
  • 1 small minced onion
  • 1 clove of garlic, minced
  • 1/2 hot pepper with the seeds and insides removed, minced
  • oil for frying

Place the salt cod in the bowl of cold water and let it sit in the refrigerator for at least 12 hours. You might want to leave it in over night and change the water once. After the salt cod has soaked in the water, drain the bowl and cover the salt cod again with fresh water...
