Mango Steak

If you love anything mango flavored then you will love this mango steak recipe! It is a Caribbean dish found on the Virgin Islands.

Ingredients:

  • 1 1/2 lbs of steak
  • 2 large onions, sliced
  • 3 green mangos
  • 2 cups of peas
  • 1 1/4 cup of tomatoes
  • salt and pepper

Place the steak in a greased casserole dish. Cover the steak with the sliced onions. Make sure the onion slices are thick and not finely chopped or thin. Peel and slice the mangoes also into thick slices. Then add the mango slices on top of the steak. Slice the tomatoes and add them to the steak along with the peas. season with salt and pepper. Then bake in the oven at 145 degrees Fahrenheit for 1 hour.

Sesame Asparagus

Sesame Asparagus makes for a great and healthy side dish to either a lunch or a dinner meal. It is also very easy to make! I just love the warm taste of toasted sesame seeds.

Ingredients:

  • 1 pound of asparagus cut into 1 ½ inch pieces
  • 1 minced garlic clove
  • 2 tablespoons of butter
  • ½ cup of chicken broth
  • 1 tablespoon of toasted sesame seeds

Cook the sesame seeds in a pan until they are golden brown. Next, heat some butter in a pan then add the asparagus and garlic. Saute the asparagus and garlic in the buttered pan for about 2 minutes.
